Description

A delightful, zesty cake bursting with the flavor of fresh oranges and topped with creamy frosting, perfect for any occasion.


Ingredients

  • 1 1/2 cups granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1 cup fresh orange juice
  • 4 large eggs
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • Zest of 1 orange
  • 1 teaspoon vanilla extract
  • 1 cup heavy cream
  • 1/4 cup powdered sugar
  • 1/2 cup orange-flavored frosting or orange zest
  • Fresh orange slices for topping

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. Cream together the softened butter and granulated sugar until light and fluffy, about 3-5 minutes.
  3. Add the eggs one at a time, beating well after each addition.
  4. Stir in the orange juice, orange zest, and vanilla extract.
  5. Mix the flour, baking powder, and salt in another bowl. Gradually add this dry mixture to the wet ingredients until just combined.
  6. Divide the batter between the prepared pans and smooth the tops.
  7. Bake for 25-30 minutes or until a toothpick comes out clean.
  8. Cool in the pans for 10 minutes before transferring to wire racks to cool completely.
  9. Whip the heavy cream until soft peaks form, gradually adding powdered sugar to stiff peaks.
  10. Spread frosting on one cake layer, place the second layer on top, and frost the entire cake.
  11. Decorate with fresh orange slices before serving.

Make ahead of time and store covered at room temperature. For clean slices, use a hot, dry knife.
