- 2 cups mashed potatoes
- 1 cup shredded cheese
- 1 pound ground beef
- 1 diced onion
- 2 cups mixed vegetables (carrots, peas, corn)
- 4 cups beef broth
- 1 teaspoon garlic powder
- Salt and pepper to taste
- Olive oil
Instructions
- Heat a drizzle of olive oil in a large pot over medium heat.
- Add the diced onions and sauté until they’re translucent.
- Stir in the ground beef, breaking it up and cooking until browned.
- Mix in the mixed vegetables, beef broth, garlic powder, salt, and pepper.
- Bring to a gentle simmer for about 10 minutes.
- Fold in the mashed potatoes and shredded cheese, stirring until combined.
- Cook for an additional five minutes until heated through.
- Serve warm in bowls, garnishing with fresh herbs if desired.
