Description

A comforting and creamy Shepherd’s Pie Soup with ground beef, mixed vegetables, and mashed potatoes.


Ingredients

  • 2 cups mashed potatoes
  • 1 cup shredded cheese
  • 1 pound ground beef
  • 1 diced onion
  • 2 cups mixed vegetables (carrots, peas, corn)
  • 4 cups beef broth
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. Heat a drizzle of olive oil in a large pot over medium heat.
  2. Add the diced onions and sauté until they’re translucent.
  3. Stir in the ground beef, breaking it up and cooking until browned.
  4. Mix in the mixed vegetables, beef broth, garlic powder, salt, and pepper.

  6. Fold in the mashed potatoes and shredded cheese, stirring until combined.
  7. Cook for an additional five minutes until heated through.
