- 1 bunch asparagus, trimmed and cut into 2-inch pieces
- 8 ounces mushrooms, sliced
- 3 tablespoons olive oil
- 4 cloves garlic, minced
- 1/4 cup soy sauce
- Salt and pepper to taste
- Cooked rice or cauliflower rice (for serving, optional)
Instructions
- Heat the olive oil in a large skillet or wok over medium-high heat until it’s shimmering gently.
- Add the minced garlic and sauté for about 30 seconds until it becomes fragrant.
- Toss in the shrimp and cook for 2-3 minutes until they turn pink.
- Add the asparagus and mushrooms, stir-frying for about 5 minutes until tender yet crisp.
- Pour in the soy sauce, stirring to coat everything.
- Season with salt and pepper to taste.
- Serve hot over cooked rice or cauliflower rice if desired.
