Description

A quick and easy chicken zucchini stir fry that brings comfort and nostalgia to your weeknight dinners.


Ingredients

  • 2 medium zucchinis, sliced
  • 2 tablespoons soy sauce
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Optional: red pepper flakes for heat

Instructions

  1. Heat olive oil in a large skillet over medium heat until shimmering and fragrant.
  2. Add minced garlic and sauté for about 30 seconds.
  3. Toss in the sliced chicken breast, season with salt and pepper, and cook until browned and cooked through, about 6-8 minutes.
  4. Add the sliced zucchinis and soy sauce to the skillet. Stir to combine and let it simmer for another 5-7 minutes until the zucchini is tender yet golden.
  5. If desired, sprinkle with red pepper flakes.
  6. Serve hot and enjoy!
