A comforting and traditional Irish dish featuring creamy mashed potatoes with sautéed greens and crispy turkey bacon, perfect for St. Patrick’s Day and family gatherings.
Ingredients

- 2 pounds of russet potatoes, peeled and cubed
- 1 cup of chopped kale (or cabbage)
- 1/2 cup of chopped green onions
- 4 tablespoons of unsalted butter
- 1/2 cup of whole milk
- 1 cup of crispy cooked turkey bacon, chopped
- Salt and pepper, to taste
Instructions
- Boil the potatoes in a large pot, covering them with water and a pinch of salt. Cook for about 15-20 minutes, until fork-tender.
- Prep the greens: In a separate pan, melt 1 tablespoon of butter over medium heat, add chopped kale (or cabbage), and sauté for 3-4 minutes until tender. Stir in green onions and cook for another minute. Set aside.
- Mash the potatoes: Drain the potatoes and return them to the pot. Add the remaining butter, whole milk, salt, and pepper. Use a potato masher to blend until creamy.
- Combine the sautéed greens and turkey bacon into the mashed potatoes until well combined. Taste and adjust seasoning if needed.
- Serve by transferring the colcannon to a serving dish, making a small well in the center. Place a pat of butter in the well before serving.

Notes
For an even richer flavor, use heavy cream instead of whole milk. Leftovers can be stored in an airtight container for up to 3 days.
