Description

A cozy toasted chicken pesto sandwich featuring juicy chicken, creamy pesto, and melty cheese on crispy bread.


Ingredients

  • 2 boneless, skinless chicken breasts
  • 4 slices of crusty bread (like ciabatta or sourdough)
  • 1/2 cup of fresh basil pesto
  • 4 slices of mozzarella cheese (or your favorite cheese)
  • Olive oil (for drizzling)
  • Salt and pepper (to taste)
  • Optional: fresh spinach or arugula for added crunch

Instructions

  1. Prepare the chicken: Season the chicken breasts with salt and pepper. In a skillet over medium heat, drizzle a bit of olive oil, and cook the chicken for about 6-7 minutes per side, or until fully cooked through and golden on the outside.
  2. Rest and slice: Once the chicken is cooked, allow it to rest for 5 minutes before slicing it into thin strips.
  3. Toast the bread: In the same skillet, add a little more olive oil and toast each slice of bread until it’s golden and crispy, about 2-3 minutes on each side.
  4. Assemble the sandwich: Spread a generous layer of pesto on one side of each slice of bread. Layer on the sliced chicken and place a slice of cheese on top. If you like, add fresh spinach or arugula for an extra crunch.
  5. Grill the sandwich: Close the sandwich and return it to the skillet. Grill on medium heat for about 3-4 minutes on each side, until the cheese is melty and the bread is crispy.
  6. Serve warm: Cut the sandwiches in half and serve immediately.
