- 1 medium sweet potato, diced
- 1 can black beans, drained and rinsed
- 1 cup diced tomatoes

Instructions
- Heat olive oil in a large skillet over medium heat until it shimmers gently.
- Add the diced sweet potato and cook until tender, about 5-7 minutes.
- Push the sweet potatoes to one side of the skillet.
- Add the ground turkey and cook until browned, breaking it apart.
- Stir in the black beans, diced tomatoes, cumin, paprika, salt, and pepper, cooking for another 5 minutes.
- Serve hot, garnished with fresh herbs if desired.
