Description

A cozy one-pan dinner featuring tender ground turkey and sweet potatoes, packed with nutrients and warm fall flavors.


Ingredients

  • 1 lb ground turkey
  • 1 medium sweet potato, diced
  • 1 can black beans, drained and rinsed
  • 1 cup diced tomatoes
  • 2 tablespoons olive oil
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Optional: Fresh herbs for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat until it shimmers gently.
  2. Add the diced sweet potato and cook until tender, about 5-7 minutes.
  3. Push the sweet potatoes to one side of the skillet.
  4. Add the ground turkey and cook until browned, breaking it apart.
  5. Stir in the black beans, diced tomatoes, cumin, paprika, salt, and pepper, cooking for another 5 minutes.
  6. Serve hot, garnished with fresh herbs if desired.
