Description

A cozy weeknight dish featuring roasted zucchini with umami flavors from garlic and smoked paprika.


Ingredients

  • 2 cloves garlic, minced
  • 1 teaspoon soy sauce
  • 1/2 teaspoon smoked paprika
  • Grated Parmesan cheese (optional)
  • Fresh herbs (like parsley or basil) for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Cut the zucchini into half-moons or quarters.
  3. In a mixing bowl, combine the zucchini with olive oil, salt, black pepper, minced garlic, soy sauce, and smoked paprika. Toss gently.
  4. Spread the mixture evenly on a baking sheet.
  5. Roast in the preheated oven for about 20-25 minutes, until tender and slightly caramelized.
  6. Remove from the oven, sprinkle with grated Parmesan cheese (if using), garnish with fresh herbs, and serve warm.
