Description

A vibrant medley of spring greens, juicy oranges, and crunchy pomegranate seeds, perfect for winter dining.


Ingredients

  • 6 cups of spring greens (mixed baby lettuces, arugula, or spinach)
  • 2 juicy oranges, segmented
  • 1 cup of pomegranate seeds
  • ½ cup of crumbled feta cheese
  • ½ cup of candied pecans
  • ½ cup of extra virgin olive oil
  • 3 tablespoons of fresh lemon juice
  • 1 tablespoon of honey
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the spring greens, oranges, and pomegranate seeds. Toss gently to mix.
  2. In a small bowl, whisk together the olive oil, lemon juice, honey, salt, and pepper until well combined.
  3. Drizzle the dressing over the salad and toss gently to coat.
  4. Top with crumbled feta and candied pecans.
  5. Serve immediately and enjoy!

Notes
