- Zest of 1 large lemon
- 1/4 cup fresh lemon juice

- 1 teaspoon vanilla extract
- A pinch of salt
- Fresh berries or coconut flakes for topping (optional)
Instructions
- In a large mixing bowl, combine the chia seeds and almond milk. Stir well to ensure the seeds are evenly distributed.
- Add lemon zest, fresh lemon juice, honey, vanilla extract, and a pinch of salt to the bowl. Mix until well combined.
- Let the mixture sit for about 5 minutes, then stir again to break up any clumps.
- Cover the bowl with plastic wrap or transfer to jars, then refrigerate for at least 2 hours or overnight.
- When ready to serve, stir the pudding and scoop it into bowls or jars. Top with fresh berries or a sprinkle of coconut flakes.
