Ingredients

  • 2 cups almond milk (or any milk of choice)

  • 1 teaspoon vanilla extract

  • Fresh berries or coconut flakes for topping (optional)

Instructions

  1. In a large mixing bowl, combine the chia seeds and almond milk. Stir well to ensure the seeds are evenly distributed.
  2. Add lemon zest, fresh lemon juice, honey, vanilla extract, and a pinch of salt to the bowl. Mix until well combined.
  3. Let the mixture sit for about 5 minutes, then stir again to break up any clumps.
  4. Cover the bowl with plastic wrap or transfer to jars, then refrigerate for at least 2 hours or overnight.
  5. When ready to serve, stir the pudding and scoop it into bowls or jars. Top with fresh berries or a sprinkle of coconut flakes.
