Description

A delightful twist on traditional pizza using nutritious zucchinis, perfect for any weeknight dinner.


Ingredients

  • 2 medium zucchinis
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • Toppings of your choice (e.g., fresh tomatoes, more cheese)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Grate the zucchinis and place them in a clean kitchen towel. Squeeze out as much moisture as possible.
  3. In a bowl, mix the grated zucchini, mozzarella cheese, Parmesan cheese, egg, Italian seasoning, garlic powder, salt, and pepper until well combined.
  4. Line a baking sheet with parchment paper and spread the zucchini mixture into a pizza shape, about 1/4 inch thick.
  5. Bake for 15-20 minutes, or until golden and firm.
  6. Remove the crust from the oven, add your favorite toppings, and return it to the oven for an additional 10 minutes.
  7. Slice and serve warm.

Notes

Make sure to squeeze as much moisture from the zucchini as possible for a firmer crust. Leftovers can be stored in the fridge for up to 3 days.
