- 2 medium zucchinis
- 1 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 1 large egg
- 1 teaspoon Italian seasoning
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- Toppings of your choice (e.g., fresh tomatoes, more cheese)
Instructions
- Preheat your oven to 425°F (220°C).
- Grate the zucchinis and place them in a clean kitchen towel. Squeeze out as much moisture as possible.
- In a bowl, mix the grated zucchini, mozzarella cheese, Parmesan cheese, egg, Italian seasoning, garlic powder, salt, and pepper until well combined.
- Line a baking sheet with parchment paper and spread the zucchini mixture into a pizza shape, about 1/4 inch thick.
- Bake for 15-20 minutes, or until golden and firm.
- Remove the crust from the oven, add your favorite toppings, and return it to the oven for an additional 10 minutes.
- Slice and serve warm.
Notes
Make sure to squeeze as much moisture from the zucchini as possible for a firmer crust. Leftovers can be stored in the fridge for up to 3 days.
