Description

Delightful and easy shrimp tacos with a crisp slaw, perfect for weeknight dinners.


Ingredients

  • 1 pound shrimp, peeled and deveined
  • 2 tablespoons taco seasoning
  • 1 tablespoon olive oil
  • 1 cup shredded cabbage
  • 1/2 cup grated carrots
  • 1/4 cup cilantro, chopped
  • 1 lime, juiced
  • 8 small corn tortillas
  • Salt and pepper to taste

Instructions

  1. Toss the shrimp with taco seasoning, olive oil, and a pinch of salt in a bowl.
  2. Heat a skillet over medium-high heat and cook the shrimp for 2-3 minutes on each side until they turn pink and opaque.
  3. Combine cabbage, carrots, cilantro, lime juice, salt, and pepper in a separate bowl to make the slaw.
  4. Warm the tortillas in a dry skillet until soft.
  5. Assemble the tacos by placing shrimp and slaw in each tortilla.
  6. Serve immediately and enjoy!

Notes

For deeper flavor, marinate shrimp ahead of time. Store leftovers separately in airtight containers.
