Description

Ingredients

Scale
  • 2 pounds of creamy, waxy potatoes (like Yukon Gold or red potatoes)
  • 1 block (8 oz) of feta cheese
  • 4 cloves of garlic, whole
  • Fresh herbs (like thyme or rosemary)
  • Olive oil
  • Sea salt and freshly cracked black pepper
  • Lemon zest (optional, for a zesty twist)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and scrub your potatoes clean.
  3. Cut them into quarters for even cooking.
  4. Toss the potato quarters with olive oil, sea salt, and pepper.
  5. Spread the seasoned potatoes in a single layer in a large baking dish.
  6. Nestle the whole garlic cloves among the potatoes.
  7. Place the block of feta cheese in the center of the potatoes.
  8. Drizzle more olive oil and sprinkle with fresh herbs.
  9. Bake for about 35-40 minutes, or until fork-tender.
