Description

A cozy one-pan dinner filled with tender beef, crisp cabbage, and colorful bell peppers, all in a creamy sauce.


Ingredients

  • 1 lb beef (sliced)
  • 4 cups cabbage (shredded)
  • 1 bell pepper (sliced)
  • 1/2 onion (sliced)
  • 2 cloves garlic (minced)
  • 2 tablespoons peanut butter
  • 2 tablespoons hoisin sauce
  • 2 tablespoons soy sauce
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Cooked rice (for serving)

Instructions

  1. Heat olive oil in a large skillet or wok over medium-high heat until shimmering.
  2. Add the sliced beef, stirring frequently until browned.
  3. Remove the beef from the skillet and set aside.
  4. Toss in the minced garlic, sliced onion, and bell pepper; stir-fry for a couple of minutes.
  5. Add the cabbage and stir until it wilts down.
  6. Mix together peanut butter, hoisin sauce, and soy sauce in a separate bowl.
  7. Return the beef to the skillet and pour the sauce over the mixture.
  8. Stir everything together until well combined and heated through.
  9. Season with salt and pepper to taste.
  10. Serve hot over cooked rice.

Notes

This dish can be prepped in advance. Store leftovers in an airtight container for up to 3 days.
