Description

A creamy and fruity dessert featuring layers of cake filled with Chantilly cream and fresh berries, perfect for summer gatherings.


Ingredients

  • 1 (8oz) package cream cheese, softened
  • 1 1/2 sticks (3/4 cup) unsalted butter, softened
  • 2 cups sugar
  • 4 large eggs
  • 3 cups cake flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup buttermilk
  • 1/4 cup vegetable oil
  • 1 tablespoon vanilla extract
  • Two 8-ounce packages cream cheese, softened
  • 2 cups powdered sugar, sifted
  • 2 teaspoons vanilla extract
  • 3 cups heavy whipping cream
  • Approximately 4 oz. fresh blueberries
  • Approximately 1 1/4 cup sliced fresh strawberries
  • Additional whole strawberries and blueberries for decoration

Instructions

  1. Preheat the oven to 325°F. Grease and flour three 8-inch pans to prepare for our delicious cake layers.
  2. Whisk together the flour, baking powder, baking soda, and salt in a medium bowl. Set this aside.
  3. Combine the buttermilk, oil, and vanilla extract in another bowl.
  4. Cream together the butter and cream cheese in a stand mixer until smooth. Gradually add the sugar and mix until fluffy.
  5. Add the eggs, one at a time, mixing well after each addition.
  6. Alternately add the flour mixture and the buttermilk mixture to the batter, starting and ending with the flour.
  7. Divide the batter evenly into the prepared pans, and bake for 25-28 minutes.
  8. Allow the cakes to cool in the pans for 5-10 minutes before transferring to a wire rack.
  9. Beat the chilled heavy cream until stiff peaks form. In a separate bowl, mix the softened cream cheese, powdered sugar, and vanilla until smooth. Gently fold this into the whipped cream.
  10. Assemble the cake by spreading Chantilly cream between layers, topping with fresh berries, and frosting the outside.
  11. Chill the assembled cake in the freezer for a smoother finish before serving.

Notes

Can be made a day in advance. Use a serrated knife for clean slices.
