Description

A quick and easy black bean salad featuring creamy avocado, crunchy corn, and zesty lime dressing, perfect for a light lunch or dinner.


Ingredients

  • 1 can black beans, drained and rinsed
  • 1 avocado, diced
  • 1 cup corn (fresh, frozen, or canned)
  • 1 cup cooked rice
  • 1/4 cup cilantro, chopped
  • Juice of 2 limes
  • 3 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Combine the black beans, diced avocado, corn, cooked rice, and chopped cilantro in a large bowl.
  2. Whisk together the juice of 2 limes, olive oil, salt, and pepper in a separate small bowl.
  3. Pour the vinaigrette over the salad mixture and mix gently to combine.
  4. Serve immediately or chill in the fridge for about 30 minutes before serving.

Notes
