- 1 avocado, diced
- 1 cup corn (fresh, frozen, or canned)
- 1 cup cooked rice
- 1/4 cup cilantro, chopped
- Juice of 2 limes
- 3 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Combine the black beans, diced avocado, corn, cooked rice, and chopped cilantro in a large bowl.
- Whisk together the juice of 2 limes, olive oil, salt, and pepper in a separate small bowl.
- Pour the vinaigrette over the salad mixture and mix gently to combine.
- Serve immediately or chill in the fridge for about 30 minutes before serving.
