Ingredients

  • 1/2 cup brown sugar
  • 1/3 cup oats
  • 1/4 cup cold butter, cubed
  • 1/3 cup flour (for the crumble topping)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together softened butter and sugar until light and fluffy.
  3. Beat in the egg and vanilla until well combined.
  4. Mix together 1 cup flour, baking powder, and salt in another bowl. Gradually add the dry ingredients to the wet mixture and mix until combined.
  5. Fold in the blueberries, taking care to keep them whole.
  6. Combine brown sugar, oats, 1/3 cup flour, and cold cubed butter to create a crumbly topping.
  7. Drop spoonfuls of the cookie dough onto a lined baking sheet, leaving space for spreading.
  8. Sprinkle the crumble topping over each cookie.
  9. Bake for 12-15 minutes or until edges are golden and tops are set.
  10. Allow cooling on a wire rack before serving.
