Description

A comforting and creamy Broccoli Cheddar Soup perfect for chilly days, bringing warmth and cozy flavors to your table.


Ingredients

Scale
  • 2 cups broccoli florets
  • 1 cup shredded cheddar cheese
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup milk or cream
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped onion and minced garlic, cooking until softened, about 5 minutes.
  3. Add the broccoli florets and vegetable broth; bring to a boil.
  4. Reduce the heat and simmer until the broccoli is tender, about 10-15 minutes.
  5. Use an immersion blender to puree the soup until smooth.
  6. Stir in the milk and cheese, mixing until the cheese is melted.
  7. Season with salt and pepper to taste. Serve warm.

Notes

Can be made ahead and stored in the fridge for up to three days. For freezing, leave out the cheese until reheating.
