- 390 g all-purpose flour
- 320 g dark brown sugar
- 15 g baking powder
- 1 teaspoon kosher salt
- 1 tbsp cinnamon
- 2 tsp cardamom
- 1 tsp ginger
- 1 tsp allspice
- 1 tsp nutmeg
- 1 tsp cloves
- 140 g unsalted butter (room temp)
- 100 g neutral oil
- 283 g whole milk (room temp)
- 2 eggs (room temp)
- 1 tbsp vanilla extract
- 227 g unsalted butter (room temp) for frosting
- 340 g powdered sugar (sifted)
- 12 oz cream cheese (cold)
- Additional ground cinnamon, for garnish (optional)
Instructions
- Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
- Whisk together the all-purpose flour, dark brown sugar, baking powder, kosher salt, cinnamon, cardamom, ginger, allspice, nutmeg, and cloves until well combined.
- Cream together the unsalted butter and neutral oil until fluffy. Add the whole milk, eggs, and vanilla extract, mixing until smooth.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined. Be cautious not to over-mix!
- Divide the batter evenly between the prepared cake pans and smooth the tops.
- Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean. Let the cakes cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.
- Beat the butter and cream cheese together in a mixing bowl until creamy and smooth.
- Gradually add the sifted powdered sugar and continue mixing until fluffy. Adjust consistency with a splash of milk, if needed.
- Place one layer of the cooled cake on a serving plate. Spread a generous amount of cream cheese frosting on top.
- Top with the second cake layer and frost the top and sides with the remaining cream cheese frosting.
- Dust the top with ground cinnamon for an extra touch.
Notes
Best enjoyed with a warm cup of tea. Cake layers can be made ahead and stored in the fridge.
