Description

A moist and tender cake infused with warming spices, topped with rich cream cheese frosting. Perfect for fall gatherings!


Ingredients

  • 390 g all-purpose flour
  • 320 g dark brown sugar
  • 15 g baking powder
  • 1 teaspoon kosher salt
  • 1 tbsp cinnamon
  • 2 tsp cardamom
  • 1 tsp ginger
  • 1 tsp allspice
  • 1 tsp nutmeg
  • 1 tsp cloves
  • 140 g unsalted butter (room temp)
  • 100 g neutral oil
  • 283 g whole milk (room temp)
  • 2 eggs (room temp)
  • 1 tbsp vanilla extract
  • 227 g unsalted butter (room temp) for frosting
  • 340 g powdered sugar (sifted)
  • 12 oz cream cheese (cold)
  • Additional ground cinnamon, for garnish (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. Whisk together the all-purpose flour, dark brown sugar, baking powder, kosher salt, cinnamon, cardamom, ginger, allspice, nutmeg, and cloves until well combined.
  3. Cream together the unsalted butter and neutral oil until fluffy. Add the whole milk, eggs, and vanilla extract, mixing until smooth.
  4. Gradually add the dry ingredients to the wet mixture, stirring until just combined. Be cautious not to over-mix!
  5. Divide the batter evenly between the prepared cake pans and smooth the tops.
  6. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean. Let the cakes cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.
  7. Beat the butter and cream cheese together in a mixing bowl until creamy and smooth.
  8. Gradually add the sifted powdered sugar and continue mixing until fluffy. Adjust consistency with a splash of milk, if needed.
  9. Place one layer of the cooled cake on a serving plate. Spread a generous amount of cream cheese frosting on top.
  10. Top with the second cake layer and frost the top and sides with the remaining cream cheese frosting.
  11. Dust the top with ground cinnamon for an extra touch.

Notes

Best enjoyed with a warm cup of tea. Cake layers can be made ahead and stored in the fridge.
