Description

Tender jumbo pasta shells stuffed with a zesty buffalo chicken mixture and warm, melted cheese, making for a comforting weeknight dinner.


Ingredients

  • 12 jumbo pasta shells
  • 1 cup cooked shredded chicken
  • 1/2 cup buffalo sauce
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese (divided)
  • 1/2 cup blue cheese crumbles
  • 1/4 cup chopped green onions
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1/2 cup marinara sauce (for topping)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cook the jumbo pasta shells according to the package instructions, then drain.
  3. Mix the shredded chicken, buffalo sauce, ricotta cheese, half of the mozzarella cheese, blue cheese crumbles, green onions, garlic powder, onion powder, salt, and pepper until combined.
  4. Stuff each cooked pasta shell with the buffalo chicken mixture, giving each shell a generous portion.
  5. Spread marinara sauce in the bottom of a greased baking dish, then place the stuffed shells on top.
  6. Sprinkle the remaining mozzarella cheese over the shells.
  7. Cover the dish with aluminum foil and bake for 20 minutes.
  8. Remove the foil and bake for an additional 10 minutes until the cheese is bubbly and golden.
  9. Allow it to cool slightly before serving.

Notes

Make-ahead advice: Assemble the shells earlier and store in the refrigerator until ready to bake. These stuffed shells freeze well too!
