Tender jumbo pasta shells stuffed with a zesty buffalo chicken mixture and warm, melted cheese, making for a comforting weeknight dinner.

- 12 jumbo pasta shells
- 1 cup cooked shredded chicken
- 1/2 cup buffalo sauce
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese (divided)
- 1/2 cup blue cheese crumbles
- 1/4 cup chopped green onions
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 1/2 cup marinara sauce (for topping)
Instructions
- Preheat the oven to 350°F (175°C).
- Cook the jumbo pasta shells according to the package instructions, then drain.
- Mix the shredded chicken, buffalo sauce, ricotta cheese, half of the mozzarella cheese, blue cheese crumbles, green onions, garlic powder, onion powder, salt, and pepper until combined.
- Stuff each cooked pasta shell with the buffalo chicken mixture, giving each shell a generous portion.
- Spread marinara sauce in the bottom of a greased baking dish, then place the stuffed shells on top.
- Sprinkle the remaining mozzarella cheese over the shells.
- Cover the dish with aluminum foil and bake for 20 minutes.
- Remove the foil and bake for an additional 10 minutes until the cheese is bubbly and golden.
- Allow it to cool slightly before serving.
Notes
Make-ahead advice: Assemble the shells earlier and store in the refrigerator until ready to bake. These stuffed shells freeze well too!
