- 4 medium zucchinis
- 2 cups cooked shredded chicken
- 1 cup cottage cheese
- 1/2 cup Franks Red Hot sauce
- 1 cup shredded cheese (e.g., mozzarella or cheddar)
- 1/4 cup green onions, chopped
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the zucchinis in half lengthwise and scoop out the seeds to create boats.
- Mix together the shredded chicken, cottage cheese, Franks Red Hot sauce, half of the shredded cheese, and green onions in a bowl.
- Season the mixture with salt and pepper to taste.
- Fill each zucchini boat generously with the chicken mixture.
- Place the stuffed zucchinis on a baking sheet and sprinkle the remaining cheese on top.
- Bake for 30-35 minutes, or until the zucchini is tender and the cheese is bubbly and golden.
