Description

Delightful cookies featuring crushed Cadbury mini eggs, perfect for springtime celebrations.


Ingredients

  • 1 cup butter, softened
  • 3/4 cup brown sugar
  • 3/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup Cadbury mini eggs, crushed

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together the softened butter, brown sugar, and granulated sugar until smooth and fluffy.
  3. Beat in the vanilla extract, followed by the eggs, one at a time.
  4. Whisk together the flour, baking soda, and salt in a separate bowl.
  5. Add the dry ingredients to the wet mixture, stirring until just combined.
  6. Fold in the crushed Cadbury mini eggs.
  7. Drop rounded tablespoons of dough onto ungreased baking sheets.
  8. Bake for 10-12 minutes, or until golden brown at the edges.
  9. Allow to cool on the baking sheet for a few minutes before transferring to wire racks.

Notes

For softer cookies, do not over-bake. Try adding different candy pieces for variety.
