- 1 lb chicken (fresh, leftover, or rotisserie)
- 2 cups corn (fresh or frozen)
- 2 medium potatoes (diced)
- 4 slices turkey bacon (chopped)
- 1 small onion (diced)
- 3 cups chicken broth
- 1 cup milk
- 2 green onions (sliced)
- Salt and pepper to taste
Instructions
- Cook the chopped turkey bacon over medium heat until crispy.
- Add the diced onion and cook until translucent.
- Stir in the diced potatoes and corn, then pour in the chicken broth.
- Bring to a boil, then reduce heat and let simmer until the potatoes are tender, about 15-20 minutes.
- Add the cooked chicken and milk, stirring to combine.
- Season with salt and pepper to taste.
- Serve hot, garnished with sliced green onions.
Notes
