Description

A heartwarming and nourishing dish filled with protein, veggies, and hearty grains, perfect for busy weeknights or cozy gatherings.


Ingredients

  • 4 very large green bell peppers (or about 5 small ones)
  • 15 ounce can tomato sauce
  • 1/2 pound ground beef or turkey
  • 1/3 cup chopped onion
  • 1 cup cooked brown or white rice
  • 1/8 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1/8 teaspoon garlic powder

Instructions

  1. Cut the tops off the peppers and remove the seeds.
  2. Place the peppers in a large saucepan and cover with water. Bring to a simmer and cook for about 3 minutes, just until the peppers are slightly soft.
  3. Drain the peppers, rinse them with cool water, and set them aside on paper towels to drain.
  4. In a skillet, heat the ground beef (or turkey) and onion over medium heat, cooking until no pink remains. Drain the excess fat.
  5. Add the salt, pepper, cooked rice, garlic powder, and half of the tomato sauce to the skillet. Stir well to combine.
  6. Spoon the meat and rice mixture into the prepared peppers, packing them gently.
  7. Top each stuffed pepper with the other half of the tomato sauce, ensuring they’re well-covered for extra flavor.
  8. Bake in an ungreased dish at 350°F for 25-30 minutes, or until the peppers are tender and the sauce is bubbling.
  9. Serve warm and enjoy the cozy flavors!
