Instructions
- Preheat the oven to 350°F (175°C). Grease a 9-inch round cake pan.
- Whisk together the flour, baking powder, baking soda, salt, and cinnamon in a bowl. Set aside.
- Cream the softened butter and granulated sugar in a separate bowl until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract.
- Mix in the sour cream until fully combined.
- Add the dry ingredients to the wet mixture, mixing just until incorporated. Gently fold in the diced apples.
- Pour the batter into the prepared pan and smooth the top.
- Combine the brown sugar, rolled oats, and a pinch of cinnamon in a small bowl; sprinkle over the batter.
- Bake for 40-45 minutes or until a toothpick comes out clean.
- Let the cake cool for a few minutes before transferring it to a wire rack to cool completely. Slice and serve.
Notes
This cake can be baked a day in advance and stored covered at room temperature. It also freezes well for up to a month.
