Description

A comforting one-pot stuffed pepper soup made in a slow cooker with ground beef, bell peppers, and a rich broth.


Ingredients

  • 1 pound ground beef (or turkey)
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 can diced tomatoes (14.5 oz)
  • 1 cup tomato sauce
  • 3 cups beef broth
  • 1 cup rice (white or brown)
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 cup shredded cheese (optional)

Instructions

  1. Brown the ground beef (or turkey) with chopped onion, bell pepper, and minced garlic in a skillet until fully cooked. Drain excess fat.
  2. Transfer the meat mixture to your crock pot.
  3. Add diced tomatoes, tomato sauce, beef broth, rice, Italian seasoning, salt, and pepper into the crock pot. Stir gently to combine.
  4. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  5. Stir in shredded cheese just before serving and let it melt into a creamy dream.
  6. Serve warm in bowls, garnished with fresh herbs if desired.
