Description

Recreate the nostalgic flavors of Taco Bell’s Mexican pizza with this easy recipe, perfect for family dinners.


Ingredients

  • 1 lb ground beef (or ground turkey/chicken)
  • 1 packet taco seasoning (or 2 Tbsp homemade blend)
  • 2/3 cup water
  • 8 small (6-inch) flour tortillas (or corn tortillas, lightly fried)
  • 1 can (15 oz) refried beans
  • 1/4 cup water (to thin beans slightly)
  • 1 cup red enchilada sauce (or mild taco sauce)
  • 2 cups shredded Mexican blend cheese (or cheddar/Monterey jack)
  • 1/2 cup diced tomatoes
  • 1/4 cup sliced green onions
  • 1/4 cup sliced black olives (optional)
  • Oil for frying (or cooking spray if baking)

Instructions

  1. In a skillet, cook ground beef over medium heat until browned. Drain excess fat. Add taco seasoning and water. Simmer for 5 minutes until thickened and fragrant.
  2. In a small saucepan, warm refried beans with 1/4 cup water, stirring until smooth and spreadable.
  3. For the Fried Method, heat 2–3 tbsp of oil in a skillet. Fry tortillas one at a time until golden and crisp, about 1–2 minutes per side. Drain on paper towels. For the Healthier Method, brush or spray tortillas lightly with oil and bake in a preheated oven at 400°F (200°C) for 5–7 minutes per side until crisp.
  4. On a baking sheet, lay one tortilla down. Spread a layer of warm beans followed by a layer of seasoned meat. Top with another tortilla, and scoop a spoonful of enchilada sauce over the top. Sprinkle with cheese and finish with diced tomatoes, green onions, and olives, if using.
  5. Bake in the oven at 400°F (200°C) for 8–10 minutes, until cheese is melted and bubbly.
  6. Slice into quarters like a pizza and serve hot with extra taco sauce or sour cream.
