- 1 can pumpkin puree
- 1 can black beans, drained and rinsed
- 1 can kidney beans, drained and rinsed
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can diced tomatoes
- 2 cups chicken broth
- 1 tablespoon chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
- Olive oil for cooking
Instructions
- Heat a swirl of olive oil in a large pot over medium heat.
- Add the chopped onion and minced garlic, cooking until soft and fragrant, about 3-4 minutes.
- Toss in the ground turkey, breaking it apart with a wooden spoon until beautifully browned.
- Sprinkle in the chili powder, cumin, salt, and pepper, allowing the spices to meld with the turkey for about a minute.
- Add the pumpkin puree, black beans, kidney beans, diced tomatoes, and chicken broth to the pot, stirring until well combined.
- Bring the mixture to a boil, then reduce heat and simmer for 20-30 minutes, stirring occasionally.
- Taste and adjust seasonings before serving.
- Serve hot, garnished with your favorite toppings.
