Ingredients

  • 20 oz cheese tortellini
  • 1 lb steak (sirloin or ribeye)
  • Salt, to taste
  • Black pepper, to taste
  • Garlic powder, to taste
  • Smoked paprika, to taste
  • 2 tbsp olive oil
  • 4 tbsp butter
  • 5 cloves garlic, minced
  • 1 cup heavy cream
  • 3/4 cup whole milk
  • 1 1/4 cups parmesan, shredded or freshly grated
  • Parsley, chopped (optional)
  • Red pepper flakes (optional)
  • Cracked black pepper (optional garnish)

Instructions

  1. Cook the tortellini: In a large pot, bring salted water to a boil. Cook the cheese tortellini according to package instructions until al dente. Drain and set aside, reserving a bit of the pasta water for later.
  2. Season the steak: While the tortellini is cooking, season your steak generously with salt, black pepper, garlic powder, and smoked paprika.
  3. Sear the steak: In a large skillet, heat the olive oil over medium-high heat. Once hot, add the steak and sear for about 3-4 minutes on each side. Remove the steak from the skillet and allow it to rest before slicing into bite-sized pieces.
  4. Make the sauce: In the same skillet, add the butter over medium heat until melted. Add the minced garlic and cook for about 1 minute until fragrant. Pour in the heavy cream and whole milk, stirring to combine and cook until it begins to thicken slightly.
  5. Incorporate the cheese: Gradually add the shredded parmesan, whisking until it’s fully melted and incorporated into the creamy sauce.
  6. Combine and serve: Add the cooked tortellini to the sauce, tossing gently to coat. Fold in the sliced steak, ensuring everything is well mixed. If the sauce is too thick, add a splash of the reserved pasta water.
  7. Garnish and enjoy: Serve hot, garnished with fresh parsley, red pepper flakes, and cracked black pepper if desired.

Notes

Store leftovers in an airtight container for up to three days. Reheat gently on the stove with a splash of milk to loosen the sauce.
