- 2 cups all-purpose flour
- 1 cup sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, melted
- 1 cup orange juice
- 1 tablespoon orange zest
- 2 large eggs
- 1 cup fresh cranberries (or frozen, thawed)
- 1/2 cup brown sugar
- 1/4 cup all-purpose flour
- 1/2 teaspoon cinnamon
- 1/4 cup cold butter, cubed
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with your favorite liners.
- Mix together 2 cups of flour, 1 cup of sugar, baking powder, and salt in a large bowl.
- Whisk together the melted butter, orange juice, orange zest, and eggs in another bowl until well combined.
- Add the wet ingredients to the dry ingredients and stir until just combined. Gently fold in the cranberries, being careful not to overmix.
- Combine brown sugar, 1/4 cup of flour, and cinnamon in a medium bowl for the streusel topping, and cut in the cold butter until the mixture resembles coarse crumbs.
- Fill the muffin cups with the batter, about 3/4 full, and sprinkle the streusel topping generously over each muffin.
- Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
- Allow the muffins to cool in the pan for a few minutes before transferring them to a wire rack to cool completely.
Notes
These muffins can be frozen for up to three months. Substitute cranberries with blueberries or apples if desired.
