Description

Delicious cranberry orange muffins topped with a sweet streusel, perfect for cozy mornings and family gatherings.


Ingredients

  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 1 cup orange juice
  • 1 tablespoon orange zest
  • 2 large eggs
  • 1 cup fresh cranberries (or frozen, thawed)
  • 1/2 cup brown sugar
  • 1/4 cup all-purpose flour
  • 1/2 teaspoon cinnamon
  • 1/4 cup cold butter, cubed

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with your favorite liners.
  2. Mix together 2 cups of flour, 1 cup of sugar, baking powder, and salt in a large bowl.
  3. Whisk together the melted butter, orange juice, orange zest, and eggs in another bowl until well combined.
  4. Add the wet ingredients to the dry ingredients and stir until just combined. Gently fold in the cranberries, being careful not to overmix.
  5. Combine brown sugar, 1/4 cup of flour, and cinnamon in a medium bowl for the streusel topping, and cut in the cold butter until the mixture resembles coarse crumbs.
  6. Fill the muffin cups with the batter, about 3/4 full, and sprinkle the streusel topping generously over each muffin.
  7. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  8. Allow the muffins to cool in the pan for a few minutes before transferring them to a wire rack to cool completely.

Notes

These muffins can be frozen for up to three months. Substitute cranberries with blueberries or apples if desired.
