- 4 salmon fillets
- 2 cups fresh spinach
- 1/2 cup sun-dried tomatoes, chopped
- 3 tablespoons garlic, minced
- 1 cup heavy cream
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Heat the olive oil in a large skillet over medium heat. Season the salmon fillets with salt and pepper and add them to the skillet. Cook until golden brown on both sides and cooked through, about 4-5 minutes per side. Remove the fillets and set them aside.
- Add the minced garlic and chopped sun-dried tomatoes to the same skillet. Sauté for 1-2 minutes until fragrant.
- Stir in the fresh spinach and cook until wilted.
- Pour in the heavy cream and stir until combined. Allow it to simmer for a few minutes until the sauce thickens.
- Return the salmon to the skillet and let it soak in the sauce.
- Serve the salmon with the creamy sauce generously spooned over the top, garnished with parsley if desired.
Notes
You can prepare the sauce ahead of time and reheat it when ready to serve. For a twist, try adding citrus or herbs to the sauce.
