- 8 oz elbow macaroni
- 1 cup pumpkin puree
- 2 cups shredded cheese (cheddar or a blend)
- 2 cups milk
- 4 slices turkey bacon, cooked and crumbled
- 1 cup fresh spinach, chopped
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- Salt and pepper to taste
- 1/2 cup bread crumbs (optional for topping)
Instructions
- Preheat your oven to 350°F (175°C).
- Cook the elbow macaroni according to package directions; drain and set aside.
- In a large mixing bowl, combine the pumpkin puree, milk, garlic powder, onion powder, salt, and pepper. Mix until creamy.
- Stir in the cooked macaroni, cheese, crumbled turkey bacon, and chopped spinach. Mix until evenly coated.
- Pour the mixture into a greased baking dish. If using, sprinkle bread crumbs on top for a crispy finish.
- Bake for 25-30 minutes or until the top is bubbly and golden.
- Allow to cool slightly before serving.
Notes
