- 4 tortillas
- 2 cups leftover mashed potatoes
- 1/2 cup shredded cheese (cheddar or your choice)
- 1/4 cup chopped green onions
- 1/4 cup sour cream
- Salt and pepper to taste
- Oil for frying
Instructions
- Heat the oil: In a skillet, heat oil over medium heat. You want enough oil to cover the bottom of the pan generously.
- Mix the filling: In a bowl, combine the creamy leftover mashed potatoes, melty cheese, fresh green onions, and a pinch of salt and pepper. Stir until everything is well blended and you can practically smell the goodness.
- Spoon and fold: Take a spoonful of the potato mixture and place it on half of each tortilla. Gently fold the tortillas over to create little pockets of joy.
- Fry to perfection: Carefully place the folded tacos in the hot skillet. Fry for about 3-4 minutes on each side, or until they turn golden brown and crispy. The sizzling sound is music to your ears!
- Serve and enjoy: Remove the tacos and let them drain on a paper towel. Serve them warm with a dollop of sour cream.
Notes
For added flavor, consider mixing sautéed veggies or jalapeños into the filling. Prepare the filling a day in advance for a quicker meal.
