Description

A vibrant and creamy salad bursting with flavor that is perfect for a nutritious lunch or light dinner.


Ingredients

  • 1 can chickpeas, rinsed and drained
  • 1/4 cup vegan mayo
  • 1 tablespoon curry powder
  • 1 tablespoon apple cider vinegar
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup diced celery
  • 1/4 cup diced red onion
  • Fresh cilantro for garnish

Instructions

  1. Mash the chickpeas in a mixing bowl with a fork until slightly chunky.
  2. Add the vegan mayo, curry powder, apple cider vinegar, garlic powder, salt, and black pepper. Mix well until combined.
  3. Stir in the diced celery and red onion until evenly distributed.
  4. Taste and adjust seasoning as needed.
  5. Serve in wraps, on sandwiches, or with crackers. Garnish with fresh cilantro before serving.

Notes

This salad tastes even better the next day. Store leftovers in an airtight container in the refrigerator for up to 3 days.
