- 2 cups powdered sugar (for frosting)
Instructions
- Preheat your oven to 350°F (175°C) and line a cupcake pan with liners.
- Whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg in a bowl.
- Beat together granulated sugar, brown sugar, and vegetable oil until smooth in another bowl.
- Add eggs, pumpkin puree, and vanilla extract to the sugar mixture and mix well.
- Gradually add the dry ingredients into the wet mixture, stirring until just combined.
- Fill the cupcake liners about 2/3 full with batter.
- Bake for 18-20 minutes or until a toothpick comes out clean.
- Let the cupcakes cool completely.
- Beat together cream cheese, brown sugar, and vanilla until smooth in a bowl.
- Gradually add powdered sugar and mix until creamy.
- Frost the cooled cupcakes with the cream cheese frosting and enjoy!
