- 4 chicken breasts
- 4 slices of turkey bacon
- 1 cup mushrooms, sliced
- 1 cup vegetable broth
- 1 cup chicken broth
- 2 tablespoons butter
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Cook the turkey bacon in a large skillet over medium heat until crispy. Remove and set aside, leaving the drippings in the pan.
- Season the chicken breasts with salt and pepper, and add them to the skillet. Cook until golden brown on both sides, about 6-8 minutes per side.
- Remove the chicken from the skillet and set aside. In the same skillet, add the sliced mushrooms and sauté until soft.
- Pour in the vegetable broth and chicken broth, scraping up browned bits from the skillet. Bring to a simmer.
- Return the chicken to the skillet, cover, and let simmer for 10-15 minutes until cooked through.
- Stir in butter for a silky sauce, and crumble crispy turkey bacon on top.
- Garnish with fresh parsley before serving.
Notes
Feel free to customize with different types of mushrooms or add spinach for extra nutrition.
