- 2 cups mixed vegetables (bell peppers, broccoli, carrots)
- 3 tablespoons soy sauce
- 2 tablespoons vegetable oil
- 1 tablespoon garlic, minced
- 1 teaspoon ginger, minced
- Salt and pepper to taste
- Cooked rice or noodles, for serving
Instructions
- Heat the vegetable oil in a large skillet over medium-high heat.
- Add the minced garlic and ginger, and sauté for about 30 seconds until fragrant and golden.
- Add the sliced chicken to the skillet, seasoning with salt and pepper. Cook until browned and cooked through, about 5-7 minutes.
- Stir in the mixed vegetables and cook for another 3-4 minutes until they are tender and colorful.
- Pour in the soy sauce and toss everything together, ensuring each piece is well coated and gleaming.
- Serve hot over cooked rice or with noodles.
Notes
For a saucier stir fry, double the soy sauce. Pre-chop ingredients for quicker preparation.
