- ¾ lb chicken thighs (or chicken breasts)
- 1 Tablespoon vegetable oil
- 1 Tablespoon toasted white sesame seeds
- â…“ cup low sodium soy sauce
- â…“ cup mirin
- â…“ cup sugar
- 1 teaspoon minced garlic or ginger (optional)
Instructions
- Prep the chicken: Start by flattening the chicken to about ¾ inch thick. Place it in a zipper bag or a large bowl to get ready for marinating.
- Marinade: In a small bowl, combine the soy sauce, mirin, and sugar. Stir until the sugar is completely dissolved. Reserve half of this marinade for later, and pour the other half over the chicken. Let it marinate for at least 15 minutes, or even overnight.
- Cook the chicken: Grill for 6-7 minutes on each side, pan fry for 7-8 minutes on each side, or bake at 400°F (204°C) for 20-25 minutes.
- Serve: Let the chicken rest before slicing. Drizzle the reserved marinade over the top and sprinkle with sesame seeds. Serve over rice or veggies.
Notes
Make ahead for richer flavor. Slice against the grain for tender bites. Store leftovers in an airtight container for up to 3 days.
