Description

Delightful egg bites loaded with veggies and cheese, perfect for busy mornings or leisurely brunches.


Ingredients

  • 6 eggs
  • 1/2 cup milk
  • 1 cup spinach, chopped
  • 1/2 cup bell peppers, diced
  • 1/2 cup cheese, shredded
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Whisk together the eggs and milk until well combined and frothy.
  3. Stir in the spinach, bell peppers, cheese, salt, and pepper, letting the flavors mingle beautifully.
  4. Grease a muffin tin and pour the egg mixture into each cup, filling them about 3/4 full for that perfect rise.
  5. Bake for 15-20 minutes, or until the egg bites are set and lightly browned on top.
  6. Allow to cool slightly before removing from the tin. Serve warm and enjoy!

Notes

These egg bites can be made ahead of time and stored in an airtight container in the fridge for up to 5 days.
