Description
A comforting and flavorful meatloaf that’s perfect for busy weeknights and easy meal prep.
Ingredients
Scale
- 2 pounds ground beef
- 1 cup breadcrumbs (or crushed crackers)
- 1 cup milk
- 1 large onion, diced
- 2 cloves garlic, minced
- 2 large eggs
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon dried oregano
- 1/2 cup ketchup (plus extra for topping)
- 2 tablespoons Worcestershire sauce
- Optional: chopped parsley for garnish
Instructions
- Preheat your oven to 350°F (175°C) and prepare a loaf pan by lightly greasing it with cooking spray.
- Combine the ground beef, breadcrumbs, milk, diced onion, minced garlic, eggs, salt, pepper, oregano, ketchup, and Worcestershire sauce in a large mixing bowl. Use your hands to mix until well incorporated.
- Transfer the meat mixture into the prepared loaf pan, shaping it into a loaf. Spread extra ketchup over the top for that delicious glaze.
- Bake in the preheated oven for about 60 minutes, or until the meatloaf is cooked through (an internal temperature of 160°F or 70°C).
- Allow the meatloaf to rest for 10-15 minutes before slicing. Serve warm, garnished with chopped parsley if desired.
Notes
Make-Ahead Magic: The meatloaf freezes beautifully. Prepare the mixture, shape into a loaf, wrap tightly, and freeze for up to 3 months.
