Description

A comforting and delicious weeknight dinner featuring grilled chicken topped with fresh mozzarella, tomatoes, and basil.


Ingredients

Scale
  • 2 boneless, skinless chicken breasts
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 1 cup fresh mozzarella cheese, sliced
  • 2 large tomatoes, sliced
  • Fresh basil leaves
  • Balsamic glaze (optional)

Instructions

  1. Preheat the grill to medium-high heat.
  2. Season the chicken breasts with salt and pepper and drizzle with olive oil.
  3. Grill the chicken for about 6-7 minutes on each side or until the internal temperature reaches 165°F.
  4. Place slices of mozzarella cheese on top of the chicken to melt during the last few minutes of grilling.
  5. Remove from the grill and let rest for a few minutes.
  6. Top with fresh tomato slices and basil leaves.
  7. Drizzle with balsamic glaze if desired.
  8. Serve warm and enjoy every bite!

Notes

For extra flavor, marinate the chicken in olive oil and herbs a few hours before grilling.
