Description

A comforting and quick weeknight meal featuring tender chicken coated in honey barbecue sauce, served over fluffy rice.

Ingredients

Scale
  • 2 cups cooked rice
  • 1 pound chicken breasts, cut into bite-sized pieces
  • 1 cup honey barbecue sauce
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Chopped green onions for garnish (optional)

Instructions

  1. Heat the olive oil in a skillet over medium-high heat until shimmering.
  2. Add the chicken pieces, season with salt and pepper, and cook until golden brown and cooked through, roughly 6–7 minutes.
  3. Reduce the heat to medium, pour in the honey barbecue sauce, and stir gently to coat the chicken evenly.
  4. Cook for an additional 2–3 minutes until the sauce thickens slightly.
  5. Serve the honey BBQ chicken hot over a bed of cooked rice, garnished with chopped green onions if desired.

Notes

For extra flavor, add vegetables like diced bell peppers or broccoli. Can swap honey barbecue sauce for buffalo or teriyaki sauce for different flavors.
