Ingredients

  • 1/2 cup milk
  • 2 cups fresh or canned peaches, sliced
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan.
  2. In a mixing bowl, combine flour, sugar, baking powder, and salt. Add softened butter and mix until crumbly.
  3. Reserve 1 cup of the crumb mixture for topping.
  4. Add milk and vanilla extract, stirring until just combined—don’t overmix; a few lumps are okay!
  5. In another bowl, mix the peaches with lemon juice and cinnamon, allowing the flavors to meld.
  6. Pour half of the batter into the prepared cake pan, layer the peach mixture over it, then top with the remaining batter.
  7. Sprinkle the reserved crumb mixture on top for that extra buttery crunch.
  8. Bake for 35-40 minutes or until golden and a toothpick comes out clean from the center.
  9. Let cool before serving, allowing those delightful flavors to settle.
