Instructions
- Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan.
- In a mixing bowl, combine flour, sugar, baking powder, and salt. Add softened butter and mix until crumbly.
- Reserve 1 cup of the crumb mixture for topping.
- Add milk and vanilla extract, stirring until just combined—don’t overmix; a few lumps are okay!
- In another bowl, mix the peaches with lemon juice and cinnamon, allowing the flavors to meld.
- Pour half of the batter into the prepared cake pan, layer the peach mixture over it, then top with the remaining batter.
- Sprinkle the reserved crumb mixture on top for that extra buttery crunch.
- Bake for 35-40 minutes or until golden and a toothpick comes out clean from the center.
- Let cool before serving, allowing those delightful flavors to settle.
