Ingredients

- 2 cups cooked rice
- 1 cup shrimp, peeled and deveined
- 2 tablespoons soy sauce
- 1 teaspoon sesame oil
- 1 cup mixed vegetables (peas, carrots, corn)
- 2 green onions, chopped
- 2 eggs, beaten
- Salt and pepper to taste
Instructions
- Heat the sesame oil in a large skillet over medium heat until it shimmers gently.
- Add the shrimp to the skillet and cook until they turn a lovely pink, about 2-3 minutes.
- Push the shrimp to one side of the skillet, and pour in the beaten eggs. Scramble them until just set.
- Add the cooked rice and mixed vegetables to the pan, stirring everything together to combine.
- Pour the soy sauce over the mixture and cook until everything is heated through.
- Garnish with chopped green onions and season with salt and pepper to taste. Serve hot and enjoy.
