Ingredients

Instructions

  1. Mix together the flour, sugar, baking powder, and salt in a bowl.
  2. Whisk the eggs, milk, and vanilla together in another bowl until well-blended.
  3. Combine the wet ingredients with the dry ingredients, stirring until just mixed.
  4. Fold in the diced peaches carefully, allowing them to distribute evenly throughout the batter.
  5. Heat oil in a deep fryer or large pot to 350°F (175°C).
  6. Drop spoonfuls of the batter into the hot oil and fry until golden brown, about 3 minutes.
  7. Remove the fritters and drain them on paper towels.
