A quick and comforting weeknight dinner with tender steak, roasted potatoes, and green beans, all drizzled with a rich balsamic glaze.

- 2 lb lean steak, trimmed and cubed into 1-inch pieces
- 1 tbsp olive oil
- 2 tbsp soy sauce
- 2 tbsp balsamic vinegar
- ½ tsp salt
- ½ tsp black pepper
- ½ tbsp garlic powder
- ¼ tsp crushed red pepper (optional)
- 3 cloves garlic, minced
- 2 tbsp low-sodium beef broth
- 1 tsp honey
- 1.5 lb baby gold potatoes, quartered
- 12 oz fresh green beans, trimmed
Instructions
- Marinate the steak: In a bowl, combine the cubed steak, olive oil, soy sauce, balsamic vinegar, salt, black pepper, garlic powder, and crushed red pepper. Let it marinate for at least 15 minutes.
- Preheat your oven to 400°F (200°C). In a large bowl, toss the quartered baby gold potatoes and green beans with olive oil, salt, black pepper, garlic powder, and paprika. Spread them evenly on a large baking sheet and roast for 25 minutes.
- Sear the marinated steak bites in a large skillet over medium-high heat for about 3-4 minutes on each side until browned and cooked to desired doneness.
- Make the glaze: In the same skillet, reduce heat to low, add minced garlic, 2 tablespoons balsamic vinegar, beef broth, soy sauce, and honey. Stir to combine and let it simmer for a couple of minutes.
- Serve the steak bites over a generous helping of roasted potatoes and green beans, then drizzle with the balsamic glaze.
Notes
Marinate the steak the night before to deepen flavors. Store leftovers in an airtight container for up to 3 days.
