Description

A comforting and nostalgic dish featuring toasted bread layered with creamy cheese and fresh veggies.

Ingredients

Scale
  • 2 slices of bread
  • 1 egg
  • 1/4 cup cabbage, shredded
  • 1/4 cup carrot, grated
  • 1 slice cheese
  • 12 green onions, chopped
  • Salt and pepper to taste
  • Butter for cooking
  • Optional: ketchup or mayonnaise for serving

Instructions

  1. In a bowl, beat the egg and add shredded cabbage, grated carrot, chopped green onions, salt, and pepper. Give it a good mix to combine all the flavors.
  2. Heat a non-stick skillet over medium heat and add a generous pat of butter, letting it melt until bubbly and fragrant.
  3. Pour half of the egg mixture into the skillet, then place a slice of bread on top of it, followed by a slice of cheese that will melt beautifully.
  4. Pour the remaining egg mixture over this first slice of bread and top it with another slice, creating a delightful sandwich.
  5. Cook until the bottom is golden brown; then, with a gentle touch, flip the toast and cook the other side until it’s golden and the cheese is luxuriously melted.
  6. Carefully remove the toast from the skillet, cut it in half, and serve it with a drizzle of ketchup or a dollop of mayonnaise if you wish!

Notes

Feel free to customize with different vegetables or cheeses to suit your taste. Leftovers can be refrigerated for up to two days.
