- 2 slices of bread
- 1 egg
- 1/4 cup cabbage, shredded
- 1/4 cup carrot, grated
- 1 slice cheese
- 1–2 green onions, chopped
- Salt and pepper to taste
- Butter for cooking
- Optional: ketchup or mayonnaise for serving
Instructions
- In a bowl, beat the egg and add shredded cabbage, grated carrot, chopped green onions, salt, and pepper. Give it a good mix to combine all the flavors.
- Heat a non-stick skillet over medium heat and add a generous pat of butter, letting it melt until bubbly and fragrant.
- Pour half of the egg mixture into the skillet, then place a slice of bread on top of it, followed by a slice of cheese that will melt beautifully.
- Pour the remaining egg mixture over this first slice of bread and top it with another slice, creating a delightful sandwich.
- Cook until the bottom is golden brown; then, with a gentle touch, flip the toast and cook the other side until it’s golden and the cheese is luxuriously melted.
- Carefully remove the toast from the skillet, cut it in half, and serve it with a drizzle of ketchup or a dollop of mayonnaise if you wish!
Notes
Feel free to customize with different vegetables or cheeses to suit your taste. Leftovers can be refrigerated for up to two days.
