A refreshing Greek Bean Salad featuring lemon marinated beans, fresh vegetables, and feta cheese, perfect for warm days.


Ingredients

  • 1 can of white beans (such as cannellini or navy beans), drained and rinsed
  • 1 cucumber, diced
  • 2 cups of cherry tomatoes, halved
  • 1/2 red onion, finely chopped
  • 1/2 cup of olives, pitted and sliced
  • 1/2 cup of feta cheese, crumbled
  • Juice of 1 lemon
  • 2 tablespoons of olive oil
  • Salt and pepper to taste
  • Fresh parsley or dill for garnish (optional)

Instructions

  1. Combine the white beans, cucumber, cherry tomatoes, red onion, olives, and feta cheese in a large bowl.
  2. Whisk together the lemon juice, olive oil, salt, and pepper in a smaller bowl until well combined.
  3. Pour the dressing over the salad mixture and toss gently to combine all the ingredients.
  4. Let it sit for about 15 minutes, allowing the flavors to meld beautifully.
