Ingredients

- 1 can of white beans (such as cannellini or navy beans), drained and rinsed
- 1 cucumber, diced
- 2 cups of cherry tomatoes, halved
- 1/2 red onion, finely chopped
- 1/2 cup of olives, pitted and sliced
- 1/2 cup of feta cheese, crumbled
- Juice of 1 lemon
- 2 tablespoons of olive oil
- Salt and pepper to taste
- Fresh parsley or dill for garnish (optional)
Instructions
- Combine the white beans, cucumber, cherry tomatoes, red onion, olives, and feta cheese in a large bowl.
- Whisk together the lemon juice, olive oil, salt, and pepper in a smaller bowl until well combined.
- Pour the dressing over the salad mixture and toss gently to combine all the ingredients.
- Let it sit for about 15 minutes, allowing the flavors to meld beautifully.
- Garnish with fresh parsley or dill, if desired, and serve immediately or chilled.
