- 4 large potatoes, cubed
- 1 cup feta cheese, crumbled
- 3 tablespoons olive oil
- 2 teaspoons garlic powder
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- Toss the cubed potatoes with olive oil, garlic powder, oregano, salt, and pepper until evenly coated.
- Spread the potatoes in a single layer on a baking sheet.
- Roast in the preheated oven for about 25-30 minutes, stirring halfway through.
- Remove from the oven and sprinkle the crumbled feta cheese over the top.
- Return to the oven for an additional 5-10 minutes until the feta is warmed and slightly golden.
- Garnish with fresh parsley if desired and serve.
Notes
You can prepare the potatoes a few hours in advance for make-ahead magic. Leftovers can be stored in an airtight container for up to 3 days.
