Description

A comforting side dish of roasted potatoes with creamy feta, perfect for chilly nights and family gatherings.


Ingredients

  • 4 large potatoes, cubed
  • 1 cup feta cheese, crumbled
  • 3 tablespoons olive oil
  • 2 teaspoons garlic powder
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Toss the cubed potatoes with olive oil, garlic powder, oregano, salt, and pepper until evenly coated.
  3. Spread the potatoes in a single layer on a baking sheet.
  4. Roast in the preheated oven for about 25-30 minutes, stirring halfway through.
  5. Remove from the oven and sprinkle the crumbled feta cheese over the top.
  6. Return to the oven for an additional 5-10 minutes until the feta is warmed and slightly golden.
  7. Garnish with fresh parsley if desired and serve.

Notes

You can prepare the potatoes a few hours in advance for make-ahead magic. Leftovers can be stored in an airtight container for up to 3 days.
