Description

A delightful summer dish featuring grilled zucchini topped with creamy goat cheese, fragrant basil, and drizzled with honey.


Ingredients

Scale
  • 5 medium zucchinis
  • Salt
  • 1 Tbsp olive oil or avocado oil
  • 1/3 cup goat cheese, crumbled
  • 2 Tbsp fresh basil, chopped
  • 1.5 Tbsp honey
  • Salt + pepper, to taste

Instructions

  1. Start by removing the ends from the zucchinis and slicing them into 1/2-inch pieces lengthwise.
  2. Spread the sliced zucchini onto a plate and salt them liberally.
  3. Set aside for 20 minutes to draw out excess moisture.
  4. Pat the zucchini dry using a cloth or paper towel.
  5. Preheat your grill to medium-high heat and brush each zucchini slice with oil.
  6. Place the zucchini onto the grill and cook for 10-15 minutes, flipping halfway through.
  7. Remove the zucchini and arrange them on a plate.
  8. Sprinkle with goat cheese and basil, then drizzle with honey.
  9. Add salt and pepper to taste.

Notes

Feel free to customize with different herbs or cheeses. Leftovers can be refrigerated for up to two days.
