- 5 medium zucchinis
- Salt
- 1 Tbsp olive oil or avocado oil
- 1/3 cup goat cheese, crumbled
- 2 Tbsp fresh basil, chopped
- 1.5 Tbsp honey
- Salt + pepper, to taste
Instructions
- Start by removing the ends from the zucchinis and slicing them into 1/2-inch pieces lengthwise.
- Spread the sliced zucchini onto a plate and salt them liberally.
- Set aside for 20 minutes to draw out excess moisture.
- Pat the zucchini dry using a cloth or paper towel.
- Preheat your grill to medium-high heat and brush each zucchini slice with oil.
- Place the zucchini onto the grill and cook for 10-15 minutes, flipping halfway through.
- Remove the zucchini and arrange them on a plate.
- Sprinkle with goat cheese and basil, then drizzle with honey.
- Add salt and pepper to taste.
Notes
Feel free to customize with different herbs or cheeses. Leftovers can be refrigerated for up to two days.
